chickpea croquettes with romesco sauce
Romesco sauce is a subtly spicy Catalan sauce built upon a base of red peppers, garlic and extra virgin olve oil. There are as many versions as there are people. The secret to my Romesco Sauce is a few handfuls of rosemary-infused marcona almonds. They inject a slightly floral, toasty crunchiness and a bit of weight.
I served the Romesco sauce over baked chick pea croquettes, with a side of cremini mushrooms sauteed in black truffle oil.
And for dessert, take a look at these pansies in windowboxes-- pretty signs of spring that Omniman and I encoutnered on our way home from the gym this evening.

I've never heard of Romesco sauce either - it looks great. I love the window boxes -- living in the suburbs, I miss seeing window boxes.

Hummm, looks great! I love chickpeas, any particular recipe you use?? I have made some sort of "falafel burgers" (posted in my blog) before and loved the taste and texture of them, I bet they would be good with your sauce too!

Ohh, I want to have this Romesco sauce- sounds like it would be delicious on everything, especially chickpea croquettes.
