chocoholic waffles with cacao nibs

Cacao nibs are the cleaned, roasted and crushed pods of the cacao bean. In other words--raw, unadulterated chocolate. Sure, they're costly, but a little goes a long way. Since no sugar is added, cacao nibs are earthily bitter. Use them whenever you want to impart a pleasant, nutty crunch.

Here, I’ve paired cacao nibs with Dutch process cocoa to create these decadent Sunday morning waffles. You can eat them as I did, with Earth Balance and maple syrup. Or toast the waffles and use them to make a sinful soy ice cream sandwich.




CHOCOHOLIC WAFFLES

1 cup flour [I used ½ white spelt & ½ whole wheat pastry flour]
3 T Dutch process cocoa
1 T sugar
1 heaping T soy flour
2 tsp baking powder
pinch salt
1¼ cup soy milk
1 tsp vanilla
2 T canola oil
3 T cacao nibs


Makes 4 large or 16 small waffles.

Mix dry ingredients, except for cacao nibs, in a medium bowl. Mix wet ingredients in a separate bowl and add to dry ingredients. Mix until just combined [Do not overmix. Batter should be a bit lumpy.] Stir in the cacao nibs just before making the waffles.

Drop batter onto waffle iron and cook according to manufacturer’s instructions. [1/4 cup is the usual measure.] Try not to peek until the light tells you they are done, or they will tear apart.

Your blog is always chock-full of so many new things for me. I've never seen cacao nibs or eaten them, to my knowledge. I love bitter chocolate so they sound right up my alley. I'm going to scout them out now.

i LOVE cocao nibs. i don't drink coffee anymore, but when i eat these nibs, it reminds me of a nice latte. i will for sure have to try these out.

Oh wow, those look fantastic... I may just need to hijack a waffle maker so that I can make these! I've had a big bag of cacao nibs waiting to be used, and this just seems to a good excuse to break them out.

Chocoholic waffles looks so good.

I have started to like chocolates like Ghirardelli's intense dark and endangered species, dark chocolatw with raspberries.

I now feel so sick when I think about days when I used to immensely enjoy chocolates such as kit-kat and cadbury's flooded with milk.

I've said it before and I'll say it again- I need a waffle iron! I just tried cacao nibs last week for the first time, and they blew my socks off! I couldn't believe how interesting the flavor was!

I've always been intrigued by cacao nibs but have shied away due to their expense. I think you may just have convinced me with this suberb looking recipe to spend the big bucks and indulge.

Those look amazing! I've heard about cocoa nibs...will have to try. I really enjoyed your post about making espresso coffees at home, too. It made me realize I've been doing a few things wrong (mainly, heating the pot over high heat) and I'm going to try your way tomorrow morning. :)

Wow! I just love cocoa nibs. Those waffles look/sound absolute divine. I'm thinking maybe I'll be making a sourdough version this weekend.

oh I miss cacao nibs! i use to "bake" at a raw foods restaurant and loved using them and just eating them as is. i loved the bitter earthiness of them. try them in ice cream!

If they're raw, they're not roasted ... just a little technicality, unless they are roasted to get out of the pod. I've always bought raw cacao nibs with the understanding that they are totally raw.
So my question: Are you using raw or roasted?
Personally I am a big fan of the raw ones - an acquired taste, you may say, but they really give you the zing and health benefits of the cacao (the most chemically complex food on the planet!) without all that other crap that is added to chocolate bars (whose great idea was it to add MILK to chocolate?? That's just crazy.) PS. Raw Cacao is awesome in smoothies.
