foil-roasted beets with wasabi vinaigrette

Being a nice Polish girl, red beets have always held a special, nostalgic place in my heart. And even though I realize wasabi is uniquely Japanese, each time I taste it, it still reminds me of the horseradish-infused Polish dishes I grew up eating during my childhood in the boondockian Pennsylvania coal regions.

This juxtaposition inspired my simple autumnal salad. The inherent sweetness and earthy innocence of the red beets is dazzled by the urbane spiciness of this wasabi vinaigrette-just as a coal-miners' granddaughter like me was dazzled by the spice and tang of city life.

Wasabi Vinaigrette Dressing
3 T extra virgin olive oil
1 T balsamic vinegar
1 T parsley, chopped fine
1 tsp rice vinegar
1 tsp wasabi paste
1 garlic clove, crushed

Mix everything well and toss over beets, salad or vegetables.

Foil-Roasting Beets
The easiest way to cook beets is roast them in foil. Wash them, cut off the green tops and wrap them individually in aluminum foil. Place them on a cookie sheet and roast them for about 45 minutes at 400 degrees. [When they're done, you can easily pierce them with a fork.] After they cool, peel the beets and use them however you like--in a salad, in borscht, or as is.

Having only had pickled beets when younger and hating them, I recently (five years ago)discovered fresh beets and now adore them and eat them any chance I get.

Oh, I LOVE roasted beets. I usually make them with an orange vinaigrette, but I'll have to try this recipe. I always roast my beets in foil, too...so easy

I may have to try beets again sometime. The last time they tried to feed me beets, I hit the far wall with them from my highchair! And no, that wasn't last week....:)

These look excellent! Here's a question for you, though: do you peel the beets before roasting them? I always do, but perhaps that's unnecessary.

Kati--I peel them after roasting. Not sure that it matters.

Two weeks ago, I had my friends over to help be cook the beets because I had never done that before. Woah! are they ever long to cook!

I ate 5 lbs of beets in 4 days.. just put pepper, they were quite yummmmmy!

A very tasty veggie that we don't eat enough of in my opinion. ;-)

I wish I could get the taste for beets because those look amazing! I was tormented as a child by an aunt who insisted that canned beets were a girly color, and therefore, every woman should like them... I'm sure yours are much better though!

I don't like wasabi but I love beets with things like orange juice or stuff on them. Most kids don't like beets I guess, but if you get them right out of the garden and they are pretty small they will be good.

I just love beets and thats probably due to the fact it was the closest thing to salad that my Welsh Father would eat so we had it always in my home. I must try it with the wasabi.
