what to eat when you're busy

Despite crazy schedules, Omniman and I have been eating well, both at home and out...

I spotted these gorgeous, Sicilian eggplants at the Reading Terminal Market. They are smaller than traditional eggplants, and are much less bitter. You don't even have to salt them before cooking them.


I roasted them, then used them as the base of a very un-Sicilian dish: spicy Indian eggplant with tomatoes and onions, served atop fluffy clouds of brown basmati rice.



Since they're easy to assemble and healthy, to boot, we often eat large salads for dinner, served with plenty of French bread. I topped this one with pan-seared portobello mushroom strips.


Last week was restaurant week in Philly. Many upscale restaurants offer 3-course meals for just $35. On Tuesday night, Omniman and I went to Salento, an Italian BYOB, with our good friends Noah and Nadine. Happily, they offered several vegan options. I started with a seared artichoke. So simple and earthy.




Then came a mountain of pasta with chick peas. Good, hearty peasant food – which is, in my opinion, the best kind.


I already miss summer's fresh blueberries. Yesterday, I made this lattice-top pie with frozen organic wild blueberries, a respectable substitute. Here it is before baking...


And here it is after – so decadent with a scoop of vanilla soy ice cream. So, as you can see, despite being busy, we are not starving!
